  • 4 cups coriander leaves (finely chopped)

  • 1 tsp coriander powder

Method to Prepare 

  • Take a large mixing bowl and add 2 cups of chopped coriander leaves. Then, add one cup of besan. 
  • After that, add one teaspoon of ginger-garlic paste, one green chili, ½ teaspoon of turmeric, ½ teaspoon of coriander powder, cumin powder, and  ¼ teaspoon of garam masala powder. 
  • Then, add one teaspoon of sesame seeds, sprinkle some salt, and pour one teaspoon of lime juice. 
  • Combine them all and ensure that all the spices are incorporated well. Squeeze and mix the coriander leaves. 
  • Now, pour water as required and begin to knead the dough. You will need to knead a soft dough. 
  • Grease your hands with oil and give a cylindrical shape to the dough.
  • Steam the dough for at least 15 to 20 minutes. 
  • After steaming, let the dough cool completely and cut them into thick slices. 
  • Meanwhile, heat oil in a deep pan. Once your vadi is ready, deep fry them in the hot oil. 
  • Ensure that you stir them occasionally to avoid sticking. Fry them until vadis are crisp and golden brown. 
  • Take the vadis out of the pan, put them on the paper towels, and drain excess oil. 
  • Serve them hot and enjoy! 

Mirchi Thecha

  • Salt to Taste

Method to Prepare 

  • Take a shallow pan and heat one tablespoon of oil over medium heat. 
  • Then, add one teaspoon of cumin seeds and stir fry them until they change color. 
  • After that, add whole green chilies and stir-fry them till they blister. Cover the pan while cooking chilies. 
  • Once the green chilies have blistered, add 1 ½ tablespoon of garlic cloves and stir everything for another minute. 
  • Switch off the gas and immediately add ¼ cup of roasted peanuts. Give it a good mix.

  • Take a saucepan and heat ghee over medium heat. Once the ghee is melted, add blanched chana dal to it. 
  • Roast the dal for at least 3 minutes and then add jaggery, ginger powder, cardamom powder, fennel powder, and nutmeg powder to the pan. 
  • Then, mix all the ingredients thoroughly and cook them for 2 minutes. Once cooked, turn off the flame and let it cool. Once cool, mash the dal with the help of a masher. 
  • Add all-purpose flour, turmeric, salt, and refined oil on a dough kneading plate. 
  • Mix everything and add a little water at a time and knead a soft dough. 
  • Once the dough is ready, divide it into three pieces. Keep these doughs aside. 
  • Take one dough and press it to make a space in the center. Add the chana-jaggery mixture into the hole and close it. 
  • Give the filled dough a circle shape and make roti with your hand or a rolling pin. 
  • Heat tawa on medium and place the roti on it. Add ½ teaspoon of ghee and cook it well from both sides.
