  • 500gms chicken, skinless, boneless, cut into bite-size pieces 
  • 5 cloves of garlic
  • 1 green chili
  • 200gms hung yogurt
  • 1 ½ tsp cornflour
  • ½ tsp black peppercorns
  • ½ tsp white peppercorns
  • ½ tsp green cardamom powder
  • ¼ tsp garam masala powder
  • Salt to taste
  • Green peppers (optional)
  • Melted butter for basting

Method to Prepare 

  • Take a blender jar and add garlic and chili with a splash of water. Blend everything to a puree. 
  • Then, take mortar and pestle and grind white peppercorns and black peppercorns coarsely and keep it aside. 
  • Now, take a mixing bowl and add yogurt and cornflour. Mix everything thoroughly to ensure that there are no lumps. 
  • Now, add the chili-garlic paste, ground peppercorns, cardamom powders, garam masala powder, and salt. 
  • Add the chicken pieces into the marinade for a couple of hours of marination or preferably overnight. 
  • Meanwhile, soak the wooden skewers in water for 15 to 20 minutes as it will prevent the sticks from burning. 
  • Preheat oven to 200C. Now, thread the chicken pieces onto the wooden skewers along with green bell peppers. Brush everything with melted butter. 
  • Firstly, brush the wire rack with butter, then place the skewers on the wire rack and cook for around 20 minutes. 
  • Turn the pieces halfway through the cooking process and baste it with butter. When you see slightly charred around the edges, your tikka is done.
