Cooking time: 10 minutes

Servings: 2 serves

Ingredients

  • 2 tsp ghee
  • 4 eggs
  • 2 cups all-purpose flour
  • Water, as needed
  • 1 Tbsp Cilantro Mint Chutney
  • hot sauce of choice
  • 8-10 slices of onion
  • 6-8 slices of tomato
  • salt to taste

Method to Prepare

  • Take a mixing bowl and add flour and gradually pour water until you get a soft but non-sticky consistency for the dough.
  • Once your dough is ready, roll it using a rolling pin and divide it into 3 equal balls. Roll out each ball into flat discs.
  • While you’re working with the dough balls, heat a pan on medium-high flame. When the pan is hot enough, carefully lay the flattened dough ball onto the pan.
  • Apply ghee to the surface and flip and repeat the same process for the other side. Cook the paratha until it has a light golden-brown color.
  • Now, heat another pan on medium-low flame and add ghee to it. Meanwhile, whisk two eggs until well combined and add them to the heated pan.
  • When the bottom of the egg starts to set, place your prepared paratha on the egg.
  • With the help of a spatula, gently press on the eggs to ensure it coats the underside of the bread well. Keep cooking the paratha for 4 to 6 minutes until the eggs are done.
  • After 6 minutes, flip the paratha and lightly toast the other side, for one minute.
  • Once toasted, set it aside on a cutting board. Spread chutney, and hot sauce. Then, add sliced onions, tomatoes, and even chicken tikka to your roll.
