Ingredients 

  • Four boneless chicken thighs
  • Three cloves of garlic, minced
  • Two tablespoons of curry powder
  • One tablespoon ginger, minced
  • One medium yellow onion, diced
  • 1 (13.5 oz.) can of coconut milk
  • ¼ cup thyme, chopped
  • Kosher salt, as per taste 
  • Freshly ground black pepper, to taste
  • Olive oil
  • Red pepper flakes, to taste

Method to Prepare 

  • Take a glass bowl and add chicken thighs to it. Season it with olive oil, salt, and pepper. Keep it aside. 
  • Now, take a large skillet and heat two tablespoons of olive oil in it over medium-high flame. 
  • Then, place marinated chicken thighs in hot oil and let them brown for around 3 minutes per side. Once browned, remove them from the skillet and set them aside.
  • Now, take another pan and add one tablespoon of olive oil. Saute onion until they are soft. 
  • Sprinkle curry powder and add garlic and ginger. Stir frequently to prevent burning and cook it for around a minute. 
  • Then, pour coconut milk and bring it to a simmer. Return the chicken thighs to the pan and bring the sauce to a boil. 
  • Cover the pan with a lid and reduce the flame to low while your chicken is being cooked inside. 
  • Allow the chicken and sauce to simmer for half an hour or until the chicken is cooked thoroughly. 
  • Once done, serve it on a plate and garnish it with chopped thyme.
