Pasty and pastry are different. A pasty is a handheld meat pie. According to the Cornish Pasty Association, a pasty is authentic only when it uses diced beef, potato, rutabaga, and onion. The most common cut used for this recipe is beef skirt steak. Additionally, these folks are pretty particular about the pasty that cloaks the filling and the manner in which it is crimped on the side.

Here, we have used a shortcrust pasty made by hand, but you can also use ready-made pasty if the time is running against you. Even if your pasties are not perfect, don’t worry; this is a fun recipe to make and delicious to eat.

For the Pasty:

  • 1 cup all-purpose flour
  • One pinch salt
  • 2 ounces cold butter, cubed
  • 2 to 3 tablespoons cold water

For the Filling:

  • 1/2 cup cubed skirt steak  
  • 1/2 cup diced potato
  • 1/2 cup diced swede (rutabaga)
  • 1/4 cup finely chopped onion
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • One large egg, lightly beaten

Method to Prepare 

  • We will be making pasties first. Take a large bowl and add flour, salt, and butter to it.
  • Use your fingertips and rub the butter into the flour and salt until the mixture looks like breadcrumbs. 
  • Do it as fast as you can to prevent the dough from becoming warm. 
  • Now, pour two tablespoons of cold water into the mixture and stir it using a cold knife. 
  • Add more cold water, one teaspoon at a time, if the mixture seems too dry. 
  • Your dough is ready. Wrap it in plastic wrap and slide it into the refrigerator for a minimum 15 minutes. 
  • Meanwhile, let’s prepare the filling. Preheat the oven to 425F. 
  • Take out the pasty dough and divide it into four equal parts. Roll each pasty into round sizes of a tea plate. 
  • Now, take a large bowl and add steak, potato, swede, and onion to it. Season the filling with salt and pepper and mix well. 
  • Add the meat mixture evenly among each pasty circle and place it on one side. Brush the pasty edges with the egg wash. 
  • Fold the circle in half over the filling to connect the two edges. Then, crimp the edges together to create a tight seal. 
  • Brush each pasty all over with the remaining egg wash. 
  • Place these pasties on a greased baking sheet and slide them into the oven. 
  • Bake them for 20 minutes. Then, reduce the temperature to 350 F and bake for another 20 minutes until golden.
