Ingredients 

  • Three clementines, divided
  • One lemon, sliced
  • 1 (3-pound) skin-on salmon fillet
  • Eight sprigs of thyme, plus one tablespoon of thyme leaves
  • 1 1/2 tbsp. pure honey
  • 1 tbsp. fennel seeds, crushed
  • Kosher salt and freshly ground black pepper

Method to Prepare 

  • Preheat the oven to 425°F. 
  • Slice a clementine and arrange it with lemon and thyme in the centre of a baking sheet. 
  • Now, add sliced clementine, lemon, and thyme sprigs to the centre of the prepared baking sheet. Lay salmon on top of them, skin side down. 
  • Add the zest of one clementine to a measuring cup and then squeeze both the remaining clementines. 
  • Add honey and whisk until dissolved. 
  • Now, brush the fish with half of the zest mixture and then sprinkle fennel and thyme over it.  
  • Season with salt and pepper. Roast 10 minutes.
