Ingredients 

  • Four large eggs
  • Kosher salt and freshly ground black pepper
  • 1 medium Poblano pepper
  • 225g fresh Mexican chorizo, casings removed
  • 55g shredded Pepper Jack cheese
  • Two large flour tortillas, warmed 
  • 1/4 cup warm refried beans, divided
  • Two tablespoons sour cream, divided
  • 1/4 cup guacamole, divided
  • Hot sauce of your choice

Method to Prepare 

  • Whisk eggs with a large pinch of salt and black pepper in a medium-sized bowl until no egg white is there, for about 15 minutes. 
  • Now, by using a broiler with the rack set, char poblano pepper, frequently rotating until the skin is blistered and black all over. 
  • Transfer it to a heatproof bowl and cover it with plastic for 5 minutes. 
  • Rub the charred skin off pepper with paper towels and finely dice the flesh after removing stem and seeds. 
  • Take another medium skillet and add chorizo. Keep the flame high. 
  • Now, cook, stir and break chorizo into small pieces with the help of a wooden spoon. 
  • Cook it thoroughly and until fat has rendered, for about 5 minutes. 
  • Lower the flame to medium-low, stir in eggs and cook until eggs have formed curds, for about a minute or two. 
  • Add in cheese and poblano pepper. Continue cooking and constant stirring until the cheese is melted. Remove them from the flame. 
  • Now, lay a just-warmed tortilla on the work surface. 
  • First, add refried beans to the center, then add one tablespoon of cream and two tablespoons of guacamole, spreading on top of the refried beans. 
  • Now, pile the eggs and cheese on top of guacamole and drizzle it with a hot sauce as you want. 
  • Fold the tortilla sides over the filling. Then, work on the bottom flap and fold it up over the filling. Don’t forget to hold sides while folding the bottom flap.  
  • Continue the rolling process until it is fully sealed. Repeat the same process for the remaining ingredients and tortilla. 
  • Serve right away and enjoy!
