Ingredients 

  • Unsalted butter, for greasing ramekins
  • Cocoa powder, for dusting
  • 6 ounces dark chocolate, coarsely chopped
  • ½ cup unsalted butter
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • ¼ cup granulated sugar
  • Pinch of kosher salt
  • 3 tablespoons all-purpose flour
  • Whipped cream or ice cream

Method to Prepare 

  • Gather all the ingredients, preheat the oven to 450 F, lightly grease 4 ramekins, and dust them with cocoa powder. Tap the ramekins to remove any excess powder. 
  • Ensure that ramekins are well coated with cocoa powder as it will prevent cakes from sticking. 
  • Melt the dark chocolate and butter by using the double boiler set over simmering water. Stir the mixture occasionally to avoid lumps. 
  • Add eggs, yolk, sugar, and salt to a medium bowl. 
  • Beat everything with an electric hand mixer on medium salt, until the mixture is thick, pale, and almost triple in volume for about 6 minutes.
  • Now, add the melted chocolate and flour into the egg mixture using a silicone spatula.
  • Fold them until smooth and completely combined. Ensure that everything is incorporated perfectly. Scrap chocolate even from the bottom of the bowl. 
  • Now, place the prepared ramekins on the rimmed baking sheet. Add batter into the dusted ramekins.
  • Slide the baking sheet into the oven and bake until the cakes are just set and starting to pull away from the sides. It will take around 10 to 12 minutes. 
  • Keep the baking sheet inside the oven and let the cakes cool for 5 minutes. Then, take the sheet out and invert the cakes onto serving plates with a kitchen towel or oven mitt. 
  • Wait for a minute or two before you unmold the cakes. After two minutes, unfold the cakes. 
  • Serve the cakes warm and garnish them with whipped cream or a dollop of ice cream and enjoy!
