Ingredients: 

  • 4 large red bell peppers
  • 2 teaspoons of olive oil
  • 1 pound of ground chicken
  • 2 teaspoons of Italian seasoning
  • 1 teaspoon of garlic powder
  • ½ teaspoon of kosher salt
  • ¼ teaspoon of red pepper flakes 
  • 1 can of no salt added diced tomatoes, with juices
  • 1 ½ cups of cooked brown rice
  • ½ cup of Parmesan – divided
  • 1 cup of shredded Mozzarella 
  • 2 tablespoons of chopped fresh basil, for garnishing

Method to Prepare: 

  • First of all, you need to prepare your oven and preheat it to 375°F. Meanwhile, lightly coat a baking dish with a non-stick spray. 
  • Slice the bell peppers in half and remove the seeds and membranes and arrange in a way that cut side stays up. 
  • Take a large nonstick skillet and heat olive oil on medium to high heat. Now, add chicken, Italian seasoning, garlic powder, salt, and red pepper. 
  • Cook until the chicken is browned and cooked through, for about 4 minutes. 
  • Drain the excess liquid and pour in the can of tomatoes with their juice and let it simmer for at least 1 minute. 
  • Remove the pan from the heat and stir in the rice with ½ cup of mozzarella and ¼ cup of parmesan.
  • Fill the peppers with this filling and top the remaining cheese. 
  • Pour in a little water in the pan with pepper and bake it uncovered for 30 to 35 minutes.
