Quick Stats:

  • Prep time: 5 minutes
  • Cooking time: 30 minutes
  • Servings: 12 cups

Ingredients:

  • 2 tablespoons of olive oil
  • 1 cup of thinly sliced carrots
  • 1 cup of thinly sliced celery
  • One cup of diced onion
  • 1 minced garlic cloves
  • 8 cups of low-sodium chicken broth
  • 2 bay leaves
  • Half teaspoon of dried thyme
  • Half teaspoon of dried oregano
  • 1 teaspoon of black pepper
  • 12 ounces of egg noodles
  • 2 cups of shredded cooked chicken
  • 3-4 tablespoons of freshly chopped parsley leaves
  • 1 tablespoon of lemon juice
  • Salt as per the taste

Method to Prepare:

  • Take a large Dutch oven and add olive oil in it. Heat the oil on a medium flame.
  • Now, add sliced carrots, celery, onions, and sauté all vegetables for around 5-7 minutes or until they become soft while stirring them occasionally.
  • After this, you have to add minced garlic and sauté the ingredients for another 1-2 minutes.
  • Next, add the chicken broth, bay leaves, dried thyme, dried oregano, and black pepper. Bring the broth to a boil.
  • Allow this mixture of vegetables and herbs to boil for nearly 5-6 minutes or until you notice that vegetables are tender. Keep in mind that if you want a liquid soup, you can add more broth. It is so because once the soup is cooked, the noodles will absorb the broth.
  • Now it’s time to add the egg noodles and let them boil with the mixture for around 10-12 minutes or until the noodles are cooked properly. While preparing this, if you feel that the liquid level of the soup is lower than you want, make sure to add more broth by adding 1-2 cups of water.
  • Now, it requires adding the shredded cooked chicken, chopped parsley leaves, and 1 tablespoon of lemon juice to add flavor to the soup. Bring the mixture to boil for 1-2 minutes or until you notice chicken is mixed well into the mixture.
  • Add the salt as per the taste. You can add around 1 tablespoon of salt, but it completely depends on the chicken broth you use. So, it would be good to taste the soup before adding salt to it.
  • Once it is cooked well, remove the bay leaves before serving it hot.
