Ingredients 

  • 2 (12 oz) boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1/3 cup all-purpose flour
  • 1 Tbsp olive oil
  • 4 Tbsp unsalted butter, cut into pieces, divided
  • 1 cup finely chopped yellow onion (1 small)
  • 2 tsp minced garlic (2 cloves)
  • 1 1/2 cups + 1 Tbsp low-sodium chicken broth, divided
  • 1 cup dry white wine, recommend Sauvignon Blanc
  • 2 tsp thyme leaves
  • 1.5 tsp cornstarch
  • 1 Tbsp minced fresh parsley

Method to Prepare 

  • First, slice the chicken breasts in half to create four portions. Cover them with plastic wrap and pound them with the help of a meat mallet to even them. 
  • Meanwhile, take a large skillet and heat oil over medium-high flame. 
  • Take a shallow dish and add flour to it. Use salt and pepper to season the pounded chicken breast portions. 
  • Then, roll each side in flour. Ensure you gently shake off the excess flour off the chicken. 
  • Carefully slide the chicken breasts into the heated skillet and cook until browned and thoroughly cooked, for about 5 minutes per side. 
  • When you flip the chicken, drizzle ½ tablespoon of olive oil if the skillet seems dry. 
  • Once cooked, transfer them to a plate and cover them with foil to keep the chicken breasts warm. 
  • Now, return the skillet to medium flame and add two tablespoons of butter. Let it melt. 
  • Once the butter is melted, throw onions and saute until tender and golden brown, for about 5 minutes. Then, add garlic and saute for a further half a minute. 
  • Now, slowly pour 1 ½ cups of chicken broth and white wine. Do this while scraping up browned bits from the bottom of the pan. Also, add thyme leaves. 
  • Bring everything to a simmer, then reduce the flame to medium-low and let it simmer until the alcohol flavor has cooked off. 
  • At this time, the sauce will be reduced to about one-third of its volume. Simmer it for at least 12 to 15 minutes.
  • Meanwhile, take a small bowl and pour the remaining chicken broth and cornstarch. 
  • Whisk them until you get a smooth slurry. 
  • Once the sauce in the skillet is reduced, pour the prepared cornstarch slurry and cook until thickened for one more minute. 
  • Now, melt the remaining two tablespoons of butter in the sauce. Here, you can add salt and pepper to adjust the taste of the chicken sauce. 
  • Take the prepped chicken out of the foil and return the pieces to the sauce in the skillet. 
  • Sprinkle it with parsley and serve it warm to enjoy!
