Ingredients:

  • 500g of boneless skinless chicken thighs or breasts
  • Salt and ground black pepper to taste
  • 2 tablespoons of olive oil
  • 1 diced onion
  • 4 minced garlic cloves
  • Half cup of dry white wine
  • 250g of sliced mushrooms
  • 2 cups of chicken broth
  • One and a half cups of heavy cream
  • 250g of dry pasta or fettuccini
  • One and a half cups of grated parmesan cheese
  • For garnishing, chopped parsley

Method to Prepare:

  • Take a bowl and add chicken thighs and some salt and black pepper in it. Mix them thoroughly to coat the chicken thighs well.
  • Now, heat olive oil in a large pot over medium flame.
  • Then, add the chicken thighs into the pot and cook them from both sides.
  • Ensure to cook the thighs until they turn golden brown. Once they are done, remove them from the pot and set them aside.
  • Then, you have to add the remaining one tablespoon of olive oil in the pot. Now, add onions and sauté them for about 2 minutes, or until they are translucent. Next, add minced garlic and sauté it for around 20-30 seconds or until you get its fragrance.

  • Once it is done, add parmesan cheese and stir until it melts completely within the mixture.
  • Remove the pot from the heat and start adding the remaining half cup of heavy cream slowly.
  • Now, make the slices of the cooked chicken thighs lengthwise and add them to the pasta. Stir well.
  • Garnish the chicken Alfredo with chopped parsley and serve warm.
