Twice-baked Potato

Quick Stats:

Prep time: 30 minutes

Cooking time: 30 minutes

Servings: 8 serves

Ingredients:

  • 4 large baking potatoes
  • 8 slices chicken
  • 1 cup of sour cream
  • ¼ to ½ cup of milk
  • 4 tablespoons of butter
  • ½ teaspoon of salt
  • ½  of teaspoon pepper
  • 1 cup of shredded Cheddar cheese, divided
  • 8 green onions, sliced and divided

Method to Prepare:

  • Before we start preparing the dish, preheat the oven to 350°F.
  • Now, bake potatoes in a preheated oven for 1 hour. You can microwave them too as it is the faster way and they will taste as good as baked ones.
  • If you are using a microwave, then it will take only 3 minutes for a potato to get baked. Check for tenderness regularly. Don’t forget to poke holes in potatoes before microwaving them so that they won’t explode.
  •   While your potatoes are getting baked, take a large and deep skillet and place chicken into it.
  • Cook it over medium-high heat until it is evenly brown. Drain it, crumble, and set it aside.
  • Once potatoes are done, let them cool for 10 minutes before you go ahead.
  • Slice the potatoes and scoop out the flesh into a large bowl. Just leave ¼ inch of the flesh inside of the potato, so it can maintain its shape and skin.
  • Now, let’s feel the potato with the delicious stuffing.
  • Add sour cream, butter, salt, pepper, ½ cup cheese, ½ of the green onions, and milk in the potato flesh.
  • Mix it with a hand mixer and until it is creamy and blended perfectly.
  • Spoon the mixture back into the potato skin and top it up with cheese and chicken.
  • Bake the potatoes for more than 15 to 20 minutes.
  • Take them out and sprinkle them with green onions.
  • Serve them hot and make your BBQ party delicious!
