Notes You Must Follow:-

  • Gluten-free flours such as buckwheat (kuttu) and oat are often crumbly. So, if you don’t want to have cracked paratha, combine two or more such flours. You can also add almond flour for better consistency and texture.
  • To set curd at home, boil and cool milk at 30 to 40 degrees C. Then add a spoonful of curd to it. Now, the curd has Lactic acid bacteria will work its wonder. This bacteria will multiply itself at 30 to 40 degrees temperature. You will get your homemade set curd in just a few hours. This type of curd is more beneficial than your standard, packaged yogurt.
  • Thaw them half an hour before making the chonka mutter recipe if you are using frozen peas.
  • To brush paratha, you will need butter. Instead of purchasing it from the market, this time, make one by yourself. Add whipped cream to a stand mixer and blend it until it peaks. Strain the buttermilk from the butter, add some salt, and slide it into the fridge. Your homemade butter is ready.
  • While using onion for filling, ensure they are finely chopped. Otherwise, the filling will fall out, and your paratha will break.
